can anyone tell me a brand of cookie sheets that wont discolor and stain? No matter what brand I have bought they only seem to last under a year? Would appreciate your thoughts and experiences thankx

So glad you asked this question. I have the same experience as you!  Hopefully someone has an answer.

Same experience with all of them but I started using parchment paper over the cookie sheet and no more issues. Also makes clean up a breeze. My newer sheets are staying clean and stain free.

I also use parchment and it works, but I found that my WORST cookie sheets were the ones I used the nonstick spray on..that is a no no, asit leaves a residue that bakes on and never comes off...

I bought mine at Sams Club, not sure of the brand but they are made in the USA and I also use parchment.  Clean-up is a breeze.

I bought some Rachael Ray cookie sheets and they still look good.  They are a darker color and have plastic grip handles.  Bought them at Younkers.  It's a midwest store similar to Macy's.

That is what happens to cookie sheets.  Any professional baker will tell you that.  Doesn't bother me as the results of what I bake on them are what I care about.  The pros say this is just seasoning them when they get discolored and stained.  My dad borrowed one of my large cookie sheets once and scoured the heck out of it before using it then complained that his cookies didn't come out right like mine do!!   It didn't bake right after that.

Parchment paper is good but I have used silicone liners that were all the rage on the Q a few years ago. (Techinque or Cooks Essentials)  I have some Pampered Chef stoneware that I use when I do bake cookies and they are supposed to get brown.

On an episode of America's Test Kitchen last night, they recommended Vollrath 68085 Wear-Ever Cookie Sheet (Natural Finish), 17 x 14.  It's $25 on Amazon.  I don't know about discoloring though.  Use parchment paper if that's a concern.

I've had good luck with Wilton. I also receivedsome professional size cookie sheets as a gift from William Sonoma and they are great! I purchased a meatloaf pan fromRachael Ray's line and was very impressed with the clean up and even baking. She has a set of baking/cookie pans that has caught my eye. ( I found my Wilton pans at BBB)
