I buy peeled, fresh garlic cloves, and love the convenience. Wegmans sells their Famiy Pack, a 16-oz bag. Tops sells them in a plastic tub. They're large cloves, too. I toss the container in the freezer, grab however many I need (never just one or two), then chop, mince, or slice, depending on what I'm making.

I do the same with onions, but I don't buy them already chopped. I chop them, place in a baggie, then freeze to use as needed, for the many soups and stews I make. It's easy to just add more to the bag(s) un the freezer when I see I'm getting low.

Ive been doing that with onions for decades. One Thanksgiving, I ended up having to get a larger than usual onion for stuffing. I realized I didn't need the whole thing so, after chopping, I put about half in a baggie for Christmas. That was such a help, and one less thing to do for Christmas. Now, frozen onions are always chopped and ready to go in the freezer. I do the same thing with carrots, using MCM's pull chopper from QVC.

I also keep a bag of baby spinach in the freezer to add to soups. If someone wants spinach, a handful can also be easily grabbed and added before heating individual frozen portions of soup.

The time-saving possibilities are endless once you realize how convenient frozen vegetables can be.

I never thought to have those mini cans of vegetables on hand for a just in case moment. I'll be doing that asap, thank you for that tip..

Better Than Bouillon is always in our fridge!  I use it and skip the salt in a soup or other dish.  We keep beef, chicken and the chili seasoning one is great too.
