@Kachina624 You'll never find that at my Texas table. Some markets here do have some good non mashed potato salad finally

I slice them one direction, then turn the egg halfway around and slice it again to make smal cubes. Easy.

I use my potato masher to smash up the eggs when I make egg salad.
Mine is the grid type.

If I didn't have the Kuhn Rikon Chop Chop, that's what I'd use, too--the grid masher. I want my egg salad very fine, with no chunks of white or yolk. The Chop Chop does that. You just keep pulling to get it to the right consistency. Plus I also do the celery and scallions in it. Love that thing.

Whoa @house cat! I never would've thought of this on my own. I can see myself doing multiple eggs at one time by using a baking sheet, then the rack, then the eggs and then the bottom of another baking sheet, using it to push multiple eggs through the rack at one time. I will try this Saturday.. thank you so much !
I'd rather cut the egg with a knife or mash with fork instead of this method.. I would hate to clean the yolk off the wires, seems like it would not be an easy task.

@RedTop My great helper in the kitchen, it is great for using to make potatoe pancakes, and coleslaw.
