I was watching a cooking show yesterday and the question came up on how long an opened box of broth would last in the fridge. They said 3 days. Is this true. I know I have used some that was in my fridge for about a week and never got sick. I was thinking of making chicken soup today and now I'm not sure if I should use it. Maybe I should just go back to using the canned broth and not waste any. I usually add some to my homemade chicken stock. What do you think.

My box of Wemans broth says a week. You can freeze it in a new container for longer. Just pour it into a bowl or ice cube trays.
Swanson or someone makes a 4 pack so you dont have to open a 32oz box for just one cup.

While I use plenty of boxed and canned broth's and stocks as well as my own homemade frozen stocks, I find having an assortment of "Better than Bouillon" jars more than convenient. Especially their low sodium versions. I probably use low sodium chicken and low sodium vegetable more than all the others combined. I do wish they would make a low sodium mushroom version.

I saw that portion of the show, and was very surprised to hear that an opened box of chicken broth was only "good" for 3 days. I have been living dangerously I guess. I will now look for smaller containers when I shop for broth. Learn something new every day!

I have the Penzeys soup bases for when I need a cup or less.

I will usually just pour it in a plastic container (one of those small Ziploc ones) with a lid and freeze it if I don't use it within a few days. if it's been in there about a week I just throw it away.

I use over-sized silicon ice cube trays to freeze extra broth. And no, I freeze it right after I use it. I wouldn't store it for a week--three or four days at the most.

I pour any extra broth into a container and freeze it. I find that if I don't, it doesn't get used in time and is wasted. It's easy to freeze and thaw quickly, especially with a microwave. No sense taking a chance of getting sick.

I also freeze unused broth. It's easy to defrost.

I didn't know Penzeys made a soup base. Must be good, huh? I do use Better than... but I don't think it's as good as home made.
