When I lived in the city there was a Hilton that offered brunch.
Like @Sooner said, there was someone who would cook eggs to order at your table as well as a roast beef carving station.
I do enjoy brunch offerings, I just don't miss the crowds!

@Sooner My mother's Bananas Foster was an occasional dessert. It's made and kept warm in a slow cooker:
1/2 cup dark brown sugar
1/4 cup rum
1/2 tsp cinnamon
1/8 tsp salt
3 bananas, cut in half crosswise, then cut in half lengthwise (yellow, but not overripe)
2 tbsp butter, cut in half
1 tsp lemon juice
served over vanilla ice cream
Spray inside crock with PAM. Whisk sugar, salt, rum, and cinnamon in crock until sugar dissolves. Place bananas in syrup cut-side down. Cover and cook on high until toothpick easily slides in and out of bananas, about 1 1/2 hours.
Place bananas in serving bowls. Whisk butter and lemon juice into syrup. Scoop ice cream onto bananas. Top ice cream with warm syrup.

I will ditto what @Sooner said about Banana Foster ... have it sometime, oh my word ... so delish. There is an ultra fancy place in Seattle that is somewhat famous for their Banana Foster ... my girlfriends and I used to go just to the bar and share one or two. If my husband is taking someone out to dinner to that place, I will invite myself to join so I can have THAT dessert.
RE: Brunch ... I like to make it at home and invite people over. I do not enjoy going out to brunch because I never feel like I get my money's worth of food. We do go for event brunches that friends invite us to, but in that case, it's not about the food, but the friends.

@Sooner I think I know which hotel. They had a champagne brunch when the hotel first opened that meandered all over the vast lobby area. Back in the day Dallas knew how to Brunch.

I'm not a brunch person. I'm diabetic so I stay consistant with my meal times. I have breakfast as soon as I get up.

I used to enjoy going out for brunch, but not anymore. The offerings are usually very high in carbs and sugar, and the whole experience leads to major overeating.

There is a local restaurant that used to serve Bananas Foster. We would order it everytime we ate there. It was so good. Sadly, it is no longer on the menu.
The same restaurant also used to have a WONDERFUL brunch. But they stopped serving it during Covid and never brought it back. They lost too many servers and chefs.
They no longer serve lunch and dinner is now a simpler and smaller selection.
