Banana Bread for Fearless Bakers

I got the original "recipe" from someone here on the boards.  I've made it (or close to it) several times, and actually paid more attention to the loaf I made last night.  

 

So for the experienced and fearless baker, here is sort of what I did.  And it was wonderful!  Not sticky, not too sweet, and we loved the sliced almonds in it!

 

Don't blame me if it isn't to your taste, and if you are nervous about baking, this probably isn't for you!  Woman Embarassed

 

Sooner's Banana Bread for Fearless Bakers! 

 

Easy Banana Bread (Original recipe under my modifications)
 
My modifications 12/15/24 Made in the Kitchen Aid tilt head mixer, paddle attachment.
 
I used about 2 or a little more bananas
I used 1 tbsp less butter and added about a tablespoon of olive oil or less
I used about 1/2 cup of sugar (more or less to taste)
1 egg
1 1/2 tsp baking soda
1 tsp or so of SALT added
more than 1 tsp vanilla--maybe 2 tsp at least
1 1/2 cups flour--not sifted, scooped and used a tad less than 1 1/2 cups to make up for not sifting and scooping.
a tiny splash of milk if needed
a lot of sliced almonds and they were good!   I even put sprinkling extra of them half way through putting the batter in the pan.
Genoating of cinnamon sugar on top
 
I creamed the banana and egg, added the warmed liquid/slightly solid but soft butter, oil and sugar, blended again, added vanilla blended in, added most of flour then sprinkled salt and baking soda on top then blended gently, if batter too loose added more flour, blended gently, looked a little stiff added a splash of milk, added almonds, stirred gently.
 
Poured in loaf pan and added cinnamon sugar to top, baked at 350 degrees for 1 hour.  WONDERFUL!

I haven't tried this recipe, been making banana bread for many years. The recipe I use is really "EASY" though: 3/4 smashed ripe bananas, 1/3 cup melted butter, 3/4 cup sugar. 1 egg beaten, 1 tsp baking soda,1 tsp vanilla extract, 1 tsp baking soda. 1 1/2 cups shifted flour ( some chopped nuts) Loaf pan w/ parchment paper liner @ 350 , 1 hour

@Desertdi It is so good, and so easy!  I wish I knew who posted it originally.  I'm going to back through my stuff and see if I can identify the person!  I have made it several times as the original and not had an issue.
