Egg salad with bacon wrap was a staple in my work cafeteria and many places in NYC.

Oh yes, bacon on egg salad is delicious. I'm a southern girl and grew up on egg salad with bacon, lettuce and tomato on white toast.

I don't care for egg salad sandwiches, but have an egg sandwich almost every day for breakfast.  I saute several fresh jalapeno slices in butter, add a scrambled egg and top with slice of sandwich Swiss cheese.  I eat this on a toasted buttered bun; delicious!!!

I do this alot---and I add avocado and a tomatoe slice on a good seedy bread for breakfast. Love a good egg salad anyway. Bacon--maybe once in awhile too.

I always add a little whipped cream cheese, to my egg salad sandwiches, it's so good.
