 I like a lesson on nutrition any time I can get one.  I have learned a lot reading these boards since the beginning and I have learned a lot from people who know things I don't know, think differently, or encourage others to try new things.

 

I don't come here to take sides or be a cheerleader for a cause such as fatty foods.  I come here as do I think most of us to have a discussion and broaden our horizons.   I hope people don't hesitate to express their opinions, but always in a nice way. Don't you come here to learn something new or to find out if you are in the majority or minority of opinions?  Isn't it all good and all an exchange of ideas?

An exchange of ideas is always welcome.  Judgemental finger pointing is not welcome.

 

Personally, I know what good nutrition is...excellent nutrition for that matter: I have taken college level courses in the subject and I learned by example from my parents, who both grew up on farms.

 

That is how I know that an indulgence in a fatty, salty, sugary, soupy, or creamy dish once in a while will not have a detrimental effect on a healthy person.

Hey HB, how's this for bacon (atrocious)-- my Kindle is obviously into healthy foods because IT changed my typing of 'fattylicious' to that'?!Smiley Frustrated  

 

I watched a demonstration by a Brit on You Tube for Creamed Savoy Cabbage and Bacon which began with cooking 6 strips of bacon in...............BUTTER until it turned golden, then removing the bacon temporarily from the pan to add MORE BUTTER to cook 2 sliced onions!  

 

The cabbage dish was super good!  I plan to make your sinful (JK) recipe soon on a smaller scale with my own substitute cream soups because of the high sodium content of canned soups and use low-fat cheeses and sour cream.  However, I will cook the bacon just like it was done for the cabbage.

Bacon and butter is the base of the gods!  I have a 1950s French cookbook that uses that as a base for a lot of dishes.  I make the potatoes (bacon, butter, onions, potatoes)  frequently for book club.

 

The cabbage dish sounds divine.  I've tried lightening Bacon Fattylicious in a few different ways, but I wasn't satisfied with the results.  I decided to make it twice a year in its full fattyliciousness.

 

Can you let me know how yours turns out and what your substitutes are?  I would love to have the dish more than I do now.

Chili, share your bacon butter base recipe!

 

Mine:

 

3 tablespoons butter

3 slices bacon

3 onions, sliced

3  potatoes, sliced

 

Place butter and bacon in the bottom of a dutch oven.

Layer onions and potatoes.

Cook on medium for 35 minutes.
