I didn't grow up in the South, but grew up in the home of a great cook. I keep my jar od bacon grease in the frig. How do you make bacon gravy without bacon grease?

My granny always cooked fat back or some call it salt pork. She used the grease while cooking.

No. Bacon has much more flavor.

While growing up, my mother always had a stainless steel bowl (probably about 4 cups) that the bacon grease went into. Stored in the fridge, but mainly used to cook eggs. Not sure what else she used it for, I will have to ask my dad if he remembers. Bacon and eggs every Sunday, and sometimes for dinner. Loved breakfast for dinner.

I grew up in the South too, and we used ham for greens and beans and cut all the fat off the ham. I still do that today, or sometimes I cook the greens or beans in chicken broth! They taste great!

No. Bacon has much more flavor.
Salt pork is not smoked like bacon and ham.

I do love bacon but don't make it very often. Frying an egg in the drippings is a must. BT's(No L) to follow. I save the pre-egg grease in the fridge but wonder how long does bacon grease keep?
