How do you cook your turnip greens or collards without bacon drippings? I don't save the drippings but I cook up one or two slices of bacon and use the fat to cook my greens. Then I crumble up the bacon on top before serving. This works well with kale. I also heat my skillet in the oven with bacon drippings, crumble the bacon in the cornbread batter, then put the batter in the skillet and bake it. It sizzles and you get a great brown crust. Yes, I grew up in the South.

My granny always cooked fat back or some call it salt pork. She used the grease while cooking.

Does salt pork have the same flavor as bacon drippings?

No. Bacon has much more flavor.

While growing up, my mother always had a stainless steel bowl (probably about 4 cups) that the bacon grease went into. Stored in the fridge, but mainly used to cook eggs. Not sure what else she used it for, I will have to ask my dad if he remembers. Bacon and eggs every Sunday, and sometimes for dinner. Loved breakfast for dinner.

I grew up in the South too, and we used ham for greens and beans and cut all the fat off the ham. I still do that today, or sometimes I cook the greens or beans in chicken broth! They taste great!

Salt pork is not smoked like bacon and ham.

I do love bacon but don't make it very often. Frying an egg in the drippings is a must. BT's(No L) to follow. I save the pre-egg grease in the fridge but wonder how long does bacon grease keep?
