I keep mine in the fridge. And I do not use it often but I do have it in case. I use it as a flavoring just as some may use a pat of butter to flavor olive oil when sautéing something. A couple of tablespoons in a big ole pot of green beans isn't that bad in my opinion.

The other night I saw bacon flavored bacon used on Chopped. I do like the idea another poster had about bacon flavored healthy oils.

My mom had a bacon grease container. The most memorable thing she made with it was POPCORN. We still enjoy it made with the drippings perhaps once or twice a year.
