This is a fun video. On these cold days-it's nice to have home baked bread. I do the final rise and bake it in a Dutch oven. The video shows the bread baking on a stone with a pan of rocks/ice cubes.

Hi lacey1.........I really appreciate the video......BUT.....I must say, that between his voice and background, I felt like I was getting a deep massage, instead of the bread.........
I make a bread, that I knead with my KA mixer, and put in the refrigerator.........and let it rise in there, and then make into rolls, or even bread sticks, or a whole loaf, and bake on my baking stones, in my convection oven, and everyone tells me the bread is just wonderful........Then, if I leave it in the refrigerator for several days, and then make the bread, it takes on a sourdough quality, without using a sourdough starter..........WONDERFUL............

Yes, it is a very 'relaxing' video! Some of the key points that I learned from it is that slow fermentation, (small amount yeast, no sugar, and hours/days in the fridge) will promote a more flavorful loaf. It is also the concept with the 'no-knead' idea. I love sourdough breads, but I can't seem to handle the responsibility of keeping one alive. Wolf, I bet your breads are delicious! ![]()

I have recently tried the no knead artisan bread recipe and it is wonderful! Makes a really delicious loaf and so easy. A little dangerous because you could eat half a loaf at a sitting, it is so good.

That was really interesting. I was thinking this would be a great recipe for sourdough instead of dry yeast, because of the long rise times.
