Growing up, homemade gravy was all I knew.  All my father (my mother rarely cooked) used was.....

flour

onions

water

salt

pepper

The above always made in the large cast iron frying pan.  Gravy always came out smooth as a baby's bottom.

 

I never had the homemade gravy gift.  I am the resident expert making Argo Corn Starch gravy.  That's as homemade I get. hidemf3.gif

If I’m making milk gravy for our breakfast, it may have a very small amount of fat in it, but often times not.   I just add and cook the flour with the meat once it gets hot and past the raw stage.   Once the meat is done, I add the milk and a little water, and cook until thick.   A good milk gravy can be made without a huge amount of liquid fat.

 

I also make milk gravy with a small amount of butter and oil, and a pack of Buddig thin beef, ham, or turkey.   

 

I love white milk gravy with sausage, hamburger, cube steak, and fried chicken bits.   

 

I only use corn starch slurry for broth gravies, with beef and pork roasts, and occasionally fried chicken.

I like a sour cream gravy with pot roast but otherwise don't care for it.  Husband likes a brown gravy.

A few months ago, in a pinch, I used a recipe for chicken gravy using chicken broth instead of chicken "drippings". I told my husband what was in it and he said it was awful and refused to have any more after the first spoonful.

 

Last week, I made it EXACTLY the same way and served it with chicken and mashed potatoes (and a veg and salad) but this time I didn't say a word. All I heard about for the duration of the meal was how delicious the gravy was.Smiley Very Happy Smiley Very Happy Smiley Very Happy

I love gravy. I make biscuits and sausage gravy every Saturday after JV football for whatever kids end up at my house.

Certain meals need gravy. Especially for major holidays. I've never mastered a decent ham gravy.
