I'm making the starter from scratch without any yeast, and have to discard remaining dough and keeping 1 cup batter, to feed. Saw on google that you can make pancakes with discarded dough. I saw one recipe for it, and it's so complicated, I can't believe someone would go to all that bother, yet I do hate to through out the discarded dough. Anyone?

Over 40 years ago I had Herman. I think it was sourdough. That starter worked me to death. Every time I turned around it needed feeding, baking, or some kind of work. I threw it out after a month or so. I liked whatever I made. I was just not going to devote that much time to the process.
Hopefully, yours will be easier and good tasting.

@gloriajean I make these cookies with the starter..I use mini chocolate chips....I also make a pizza dough.....I believe it's on the King Arthur site....DW

Thanks for the recipe - and I googled and found some more - pancakes, blueberry muffins and banana bread which I will try with the discarded dough.

Also, years and years ago I used to make Herman too, it's like the friendhip batter that goes on and on. That's got more sugar though so don't make that anymore. I read that sourdough is more healthy breads. I still think my Health Bread is very healthy and delicious, so I won't quit making that or the Oatmeal breads, just adding more for variety.

@gloriajean Good for you!! Years ago myself and friends and family kept one going and not only was it greatly productive but lots of fun. Haven't thought of that for many years. Sounds as though you're on your way to success. Have fun!

Thanks for your encouragements, people, I did have success this afternoon making muffins using the discards from the sourdough, blueberry and raspberry muffins. Both batches turned out well.
Husband and my Hospice Nurse daughter loved them, and I sent some home with her. I googled and printed the blueberry muffins, banana bread and pancakes. Good way to use the discards of the sourdough. I will try the chocolate cookie recipe too sometime. Tomorrow I may have enough active dry yeast ready to bake some sourdough bread. So I will look up some sourdough bread recipes. It is fun to experiment especially when it turns out well!!

I have made bread for 40 years, by hand and mostly by bread machine since 1992. I've had several experiences with sourdough and frankly found it far more trouble than it was worth. And a mess.
If I weren't going to use the discard I sure wouldn't be making sourdough.
