Just took down my teapots above my cabinets to wash. Sticky dust...put in dishwasher and hand washed.
Next up, the opposite side. Twelve foot ceilings so no ceiling csbinets possible. I am almost 5'2"!

My cabinets don't go to the ceiling. I have what I guess are soffits. Mine contain lighting. When we remodeled I guess we could have had them removed, but I wasn't going to go through that big mess.
I think having empty space on top of the cabinets can be nicely decorated and add to a kitchen's charm, if done sparsely and well. It does get dirty up there, buy cleaning just a couple of times a year max should do, unless you are frying with grease on a regular basis, which I don't do.
Cabinets all the way to the ceiling would be a waste, in my opinion. Too high to access easily, and my motto for kitchen storage these days is all about ease of access. No more digging back in the lost black hole of poorly designed cabinets, no more climbing on ladders or stools to access the top shelf.
Cabinets all the way to the ceiling sometimes don't look right either. They sometimes look all jammed in. A soffit or cabinets below the ceiling make the room look bigger, more open sometimes as well.

I'd also like to state I live in an older home, i.e. 9-10ft. ceilings & not open concept. And have a relatively small kitchen compared to newer homes. So maximizing space with cupboards to the ceiling is a smart decision in that regard. I did have crown moulding added to the ceiling to soften the edges at the top.
I'm also "tall" so honestly except the super top shelf, I can reach everything & anything in my kitchen. Have a tucked away step stool if needed. And when designed, made sure not to have any "black holes" so everything is reachable/in view or has a pull out shelf to get to things in the back. Bigger isn't always better if thoughtfully & well planned out & designed by experts! I've certainly learned that in this home which I love.
I do have what I call a pantry one floor down from the kitchen which is HUGE (probably 30 feet long, floor to ceiling) but like access to most used daily things IN my actual kitchen. And my love of ceiling height cabinets!
We all like different things, it's interesting to hear varying opinions.
