I put a Wilsonart cherry laminate floor throughout my whole house except for my bathroom about ten years ago.  It still looks great.  I don't regret putting it in my kitchen.

We purchased an older home and updated the flooring. I picked Wilsonart ( a Pergo type floorint) for all the main rooms. (living, dining, hallway, den) I kept the flooring the same for all areas except the den. I did the sqaure, marble look tiles in that room. I had them install the same type of type in a oblong shape in the area for the dining room table. It really sets off the room. In the kitchen I decided on ceramic tiles in the larger size. I do spill and have dogs. I use my Hann steamer and it's great. I have a microfiber runner in front of the sink that can be thrown in the washer. 

I did carpet the lower level family room and guest room.  We could not decide which way to go down there between the Pergo or the carpet.  At this point, I'm sorry that I did carpet and not the Pergo.  It's just so much easier to maintain.

I have area rugs in the living room and bedrooms so it breaks up the services a bit. Our rooms are large and it's a semi open floor plan. I was really concerned with it looking like a bowling alley especially since I prefer light woods and pastels.  We are very pleased with our choices.

We are in the process of some remodeling.  We just bought flooring the other day.  We are doing a handscraped hickory but went with engineered wood. Engineered wood can be stripped and refinished once, unlike laminate.  We actually had picked out a laminate but this wood went on sale on a special buy at the store and ended up being considerably cheaper than laminate.  It's not installed yet so we'll see.  It's going into our kitchen, living room and entryway.

 

Laminates have come a long way. Pergo has as well.  Back when Pergo first came out, a good friend of mine did her kitchen and hated it. She ended up ripping it all out within 1 year.  It showed everything when she tried to clean it.

Due to allergies and COPD, we got rid of our carpet and put down laminate flooring in all bedrooms, hallway, and living room.   We chose a medium oak color that goes very well with our honey oak stained woodwork.   I am always amazed at what a swiffer duster picks up off our floors, because you cannot see the dust on them, even in the brightest light.  

 

Our bathrooms, kitchen and dining room have ceramic tile.    We have a smooth finish tile in our main bath and dining room.  When we updated our kitchen 2 years ago, I chose a darker colored, textured finish tile with dark grout, which provides a safer, non-slip surface.   I use a steamer on my tile surfaces, and the textured finish on the kitchen tile, will pull the cover off the steamer several times before I can get the entire floor cleaned.   Sometimes it is just easier to mop the traditional way, but I still love the tile, and having a safer surface in the kitchen.

The hickory is medium to dark and yes shows everything but it works for me and my coloring in the small house  ( I clean more often now lol). But I will never have carpeting again. Rugs maybe. Something that can be moved and cleaned. When I think about the carpet I had in an apartment for 20 yrs...now seeing how much I clean my floors... YIKES heebee jeebees.

How nice is that Sikestone huh?! I want that quartz in my kitchen someday. . You sound like you research well. Have confidence in your choice....and fun!

I really like the ceramic tile that looks like wood flooring.  Some are much nicer than others.  I plan on using it in the pool house.  Would that work in  your kitchen?

We have the woodgrain vinyl plank flooring in our camper - 4 years now and I absolutely love it. Ours is a dark cherry color so I do have to dusat it daily with a Don Aslett mop but that is all - takes about 10 min to do the entire floor.I am personally a fan of vinyl floors - inexpensive, easy to clean, soft to walk on and when you get tired of it - easy & inexpensive to replace. When we lived in Pa we had a vinyl floor that looked like cobblestones,so pretty. I have ceramic tile here in Fl - hate it. Cold & hard to walk on, if you drop anything it breaks immed. and if you have to get them taken up for any reason - OMG it is horrible. Plus they chip along the edges. When you clean them you have to use a scrubbie to do the grout. I hate them.

That is what we're planning on putting in our kitchen, dining, living and hallway.  I picked out a textured  light oak waterproof vinyl plank to go throughout the space and will purchase a large rug for the living room area. 

We now have ceramic tile in the kitchen and carpet in the living room area.  (we have an open concept space)...I absolutely HATE!!! the tile and the carpet.  The tile is a nice color (light beige),  but it is so hard to walk on and the floor is extremely cold and is hard to keep clean ( I know what you mean about the grout!).

 The flooring I picked  will have some warmth and some 'give' when walking on it. 

We are in the process of taking out the tile and cement underlayment as I speak...what a mess!!

Never again will I have ceramic tile...

I would strongly consider the new vinyl planks which look exactly like wood,  AND  you can use them in the whole area including the kitchen.   Wish I had them.

Look into resilient vinyl floor planks. That is what we are thinking of getting in our new house.
