Some of the homes on home-selling sites are interesting to view. Sites like realtor dot com. Owners & agents stage some of the homes to make them appealing to buyers. Some of the other homes not so much.

I don't mean this in the snobby way it's going to sound, but I don't think there's a big market for photos of uninspired homes/rooms.
In my experience, rooms are either striking, or they're not. They can be striking in their simplicity, or striking in their opulence. Neither is striking just because there is no "junk" on the kitchen table; the creator/owner just has an eye for design. I think that's the reason homes/rooms are photographed.

I love these pictures of a more simple lifestyle, yet I find
that some of the things I see in the fancier homes, I can easily incorporate a few of them into my home and still have a look I like. I live in a ranch home about 1650 sq. ft. and tend to put into it whatever I love. It's working for me!

Remember, too, that for photographic interest, there tend to be more things and more color clustered together that will catch your eye. The photo staging is often not at all what you would want to live with, but what catches interest in the photos.
Often, I find that more realistic photos of scenes that would be perfectly fine in a modest home are not as interesting just because of the way the photos are done.
Not every surface needs an adornment or display. *
