I am making the traditional Thanksgiving dinner, turkey, mashed and sweet potatoes, fresh green beans, corn, garden salad, gravy, relish tray, deviled eggs and a couple of pies and homemade rolls.

 

I am making the deviled eggs, pies and cranberry relish on Wednesday and will also mix the dough for my rolls.

 

Everything else will be prepared, baked/cooked on Thursday.  We are eating after 3 o'clock.

 

I make roast turkey and chicken dinners with the trimmings all year. Whole birds are affordable and there is always leftovers.  They are a great money stretcher.

 

I just got a new double oven range last week, thankfully.  My old double oven range has acted up last year for Thanksgiving, Christmas and Easter.  I kicked that baby out.

 

 Things should go smoothly this time and my oven won't turn itself off and my burners will heat up and no blinking error messages and dinging.

 

Everyone, enjoy your holiday meal no matter what your having and who you're with even if you're spending the day with only yourself.

Turkey breast is thawing in the refrigerator. DH is going to smoke it Weds since it will be 55°. Colder at 45° on Thurs.

We don't care for all the Thanksgiving dishes.

Making turkey breast, pecan pie, homemade rolls, creamed corn, watergate salad & roasted rosemary potatoes.

Believe it or not but we already had our Thanksgiving last weekend! Crazy, but it was just me and DH this year and we thought why wait LOL.

 

I bought an 8 lb Butterball whole turkey breast, and fixed all the old traditional stuff like mashed potatoes and gravy, stuffing, sweet potatoes, green bean casserole, cranberry sauce, rolls and pumpkin pie/sugar cookies.

 

I was so relieved and happy that everything turned out so yummy because I have had some spectacular fails in the past couple years (one time using my Instapot and another using my slow cooker to make the turkey. I blamed the turkey, but apparently it was all me LOL).

 

Thinking about planning for this year I remembered in the past I had used a Reynolds cooking bag for the turkey once and it had turned out fabulously. I thought hard about if I really wanted to use a bag again (plastic fears), but thought it's only once a year so I'd do it. 

 

To prepare the turkey I mixed some onion powder, garlic salt, paprika, and pepper into a couple tablespoons of olive oil with in a bowl, and rubbed that all over the turkey, including the cavity. I put onion, celery, carrots in the cavity (to add flavor for the drippings for the gravy).

 

Then I added a tablespoon of flour to the bag and shook it all around as per the bag instructions, and placed the seasoned turkey in the bag. I used the included tie to close it up, and placed all inside in a roaster pan. I baked it at 325F and since it was a small turkey breast it only took about 2.5 hours until it tested 165-170F and then out of the oven and let it rest. It came out browned perfectly (with no basting!) and was so moist. OMG it was delicious.

 

Now my DH says to always make it that way. He also has bad memories of my past turkey disasters! Even my dog was happy Woman Wink

I will be picking up the last few fresh items today, getting my turkey pieces out to defrost and then will marinate the turkey all day Wednesday, make my eggnog pie, also get my turkey gravy started and then will cook Thursday--just me and DD this year so really not much to worry about. Have a new type of green bean casserole to try--hate the traditional one--yuck!! I want to smoke the turkey parts this year--have a Ninja outdoor grill/smoker that I have yet to smoke anything on. Love turkey dinner!!!
