Shouldn't all channels be as sharp on HDTV?

Just got the Sony 46" TSV Braveira led/lcd -- my cable co. only offers 1080i as opposed to the 1080p which is in the description for this tv--- since I assume they sold all of them ( I can't find any reviews on it) So is it the norm that different channels have different "sharpness and clarity to them? Surely I am not limited to watching only HDMI channels? Can someone suggest why this is and if there's a solution ( other than changing from cable?)
