Re: Welcome Back, Butter, We Missed You OUR MISGUIDED FAT-IS-EVIL THINKING IS FINALLY GOING AWAY: MARK BITTMAN

I'm a firm believer that the dairy industry takes the fat out of whole milk and markets 2% and skim as better for you so they can make lots of money off people selling them watered down version of milk all while they they take that fat and use it to make other products so they can make more money....it's all about profits!

Plus....why do humans drink milk once we are weaned?.....there are other ways to get protein, calcium, vitamins, etc.

The French don't eat in between meals the way that Americans often do. They also walk more than we do to get to their destination.

And as far as the poster who said that fat is the cause of high insulin levels, nothing could be further from the truth. Excess carbohydrates and simple sugars are what affect insulin levels. High insulin levels contribute to storage of fat and many experts have written that it may be why we have so much obesity in this country. Americans preoccupation with desserts and sugar in general...

The low fat diet has failed us and the drive to cut out most fats from the diet has made many people to live on a spaghetti and high carbohydrate diet thinking they are doing something health for themselves.

BTW, none of this is really new news. There have been many studies pointing to the fact that carbohydrates and sugar are really the cause of our high rate of coronary artery disease...

Too many chemicals and fillers in processed foods, I don't mind cooking from sratch and avoid instant anything.

I must confess, though, that it is sometimes difficult to do food shopping. I was walking into the supermarket yesterday and on the way in was a prominent display of Mallomars and my favorite brand of potato chips. Last week it was Irish soda bread. {#emotions_dlg.devil2}{#emotions_dlg.sad}

I try and shop the perimeter of the market but I can really understand why people love their junk food.

I do give in sometimes, one of my favorites are oreo cookies, especially when I'm stressed.

Mine are those chocolate ice cream pops with caramel. {#emotions_dlg.crying} I could eat the entire box in one day and there are 3 large bars in the box. Then I get sick from them and swear I won't ever eat them again. Then a few months later I do the same thing. I think what Straykatz posted about food addiction is definitely right...

who makes these ice cream pops you speak of?? I want to try them!!

Magnum double caramel ice cream pops. I think there is a commercial running in our area where a girl is jumping from car to car to get to them.{#emotions_dlg.devil2} One taste and you will be hooked. If you have a lot of will power you can buy the box with 5 in them...the mini size and they aren't a lot of calories if you eat just one. Myself, I can't be in the house with a box of them without them calling my name.{#emotions_dlg.laugh}

It is true whole milk is better for you and your weight. Your body cannot digest protein or absorb calcium without fat. Vitamin A and D are also fat soluble so you can't absorb them from the milk when all the fat has been skimmed off. The healthiest foods are WHOLE foods.

I just feel so guilty using butter. Although I do bake with it. I do use skim milk in coffee etc.

Lately, I have read that skim milk is high on the glycemic index and whole fat milk is better for us because it has less sugar content. Sometimes, it is so difficult to decipher who to listen to....there is so much information being bandied about and who do we believe.

Are you serious??? Sheesh...might as well stop eating and breathing.

Yes, I completely agree with you. Just about everything I eat seems to have something wrong with it or someone will find something wrong with it. I have decided to try my best but I tried to give up my half and half in coffee recently and it tasted awful. I found a substitute from Land of Lakes called Low Fat half and half. It has 1gm of sugar for two tbsps and it has no junk in it. It's the best i can do. The fat is less but it still makes the coffee taste good.

I'll see if I can find it. I bpught the FF version and it was tasteless.

I did find a Farmland half and half version that is skim milk with none of the additives and it's very good. It's just hard to find.

Yes, the Fat Free version is terrible and has a lot of additives that the Low Fat version doesn't have.

Here's something that's good if you like hummus. I place it on top of romaine lettuce leaves, add tomato wedges, Greek olives, and a little onion shaved paper thin. On top of that I lightly drizzle olive oil on top. I cut pita into wedges, and place around it on the plate. It's really good.

Some troll posts a study that anyone who has followed healthy eating already knows about and you all jump on it like it is new news.

It's true. This info is somewhat old news. Many people have been defending butter for years. It is only now however, that we actually have longer term/larger numbers in studies that clearly demonstrate that with the trend away from saturated fat and toward high carbohydrate consumption in our diet has led to an increase in obesity and all the comorbid pathology.

I think that in defense of Bitman's article and the term "at long last", there is general consensus now, that hasn't been there in the past.
