I never roast a whole chicken myself, but this week I bought a jumbo herbed rotisserie chicken at a local Kroger affiliate. From that I made a Greek lemon pasta dish, a chicken Waldorf salad, and chicken vegetable soup. I was also able to sneak a few pieces of the chicken while I was taking it off the bones. Yum. All of the dishes I made had so much flavor, and I left out a whole step in the cooking process.

I still buy the roasted chicken from the Hen House deli once a week. It is the best! At least I eat good twice a week. Now I have to figure out the other 5 days.

I cook almost every day, actually.

But I eat very plain for the mostpart. This chicken was way more work than I usually do even though it was super easy.
