I have a fiber based diet, so when eating out, a big part of my meal is the salad bar.
I can easily bypass the caloric stuff such as potato and pasta salads: if I have any, it's just a nibble....I have to save my carbs for things that matter.
I love salad bar beans: chick peas and red beans are favorites....and there is something magical about salad bar green peas. Purple onions, mushrooms-green peas and sunflower seeds on a bed of baby spinach? Oh-let's not forget some hard boiled egg ( which is funny because they are not among my favorites at home)....sunflower seeds...and Ruby Tuesday just added hummus and Asiatic cheese chips to its offerings.

Don't feel that salad bars are clean.

My local grocery has the best salad (not nearly as good as Wegman's, however) in our area, and it is put out fresh at 11 a.m. I am there when it is put out (I have been known to help them get it out on time), and I am very particular as to what I put in my salad.
Here it is: mixed lettuces, spinach, shredded radish, cukes, red onion, two olives, crushed pineapple, crumbled bleu cheese, and sometimes two slices of beets and two cherry tomatoes. If there is fresh fruit, I do a separate salad bowl.
I skip all of the mayo-based salads and cakes.

We have a Sweet Tomatoes down here where we eat about every other month or so. It is basically a salad bar with soups and breads. I like the fresh spinach, mixed greens, beets, various beans, and little vinaigrette. I always get one pepperoncini with it.

I love all the different greens and a great pasta salad. I've tried to make my own and even with the best recipe, it's a fail.
Once I build my salad, I usually dress it with a light vinagrette but spoil myself and top it off with a dollop of bleu cheese dressing.
A good salad bar is not easily available. We used to have one local grocery chain with a great salad bar daily but they ultimately went out of business-- owner passed & the family sold it, then it went under.
The buffet restaurants usually have the best salad bar, but I rarely eat at a buffet.

I rarely patronize a salad bar, but love building one at home with fresh things from the grocery or farmer's market. I love bitter greens, so my salad always include arugula and/or escarole. Other ingredients usually include some combination of: Swiss chard, Romaine lettuce, heirloom tomatoes or Campari tomatoes, Vidalia or sweet onions, sweet peppers, radish or turnip, beets, Mont Olive Butter Chip pickles, and a little cheese. Favorite cheeses are: Swiss, Asiago, Gouda, Parmesan, Monterey Jack, but I like to mix a bit of several to experiment with the flavors. Occasionally broccoli, spinach, and Kale make into my salds. I am do not like salad dressing (it's a gastro system thing for me). I save the leftover juices from the Mount Olive pickle jars to use as salad dressing.
I think it's the too many hands touching at salad bars which turn me off. The kitchen staff may slip up with hygiene, but sometimes restaurant managers require those preparing salads to wear gloves, so I feel more comfortable ordering a prepared salad. Even with that bit of sanitary security, I still eat most of my salads at home.

I am a salad fanatic; I love everything! However, I won't go near a salad bar.
I admit I'm neurotic.
