From Tea Time Magazine:

1 cup finely chopped fresh pineapple

1/2 cup finely chopped orange bell pepper

1/2 cup finely chopped cucumber

1 tablespoon minced fresh cilantro

1 tablespoon fresh lime juice

1/2 teaspoon salt

In a small bowl, combine pinapple, bell pepper, cucumber, cilantro, lime juice, and salt, stirring well.

Cover, and refrigerate until needed. ENJOY YIELD 1 3/4 cup.
