Long Time No Talk....SO WHAT'S FOR DINNER??

Oh My.....Hello old and new friends....Have not posted here in so long.  So many changes and challenges, but I hope we can re-connect on what we're eating here in "Community Chat" vs the old Viewpoints.

 

One of you oldies will have to guide me, lol!  I still love cooking for you all, but this posting situation is definitely a new challenge!

 

So today, I decided to prep a few chicken breasts with a homemade marinade of OJ, shallots, olive oil and cumin.  Then adding a side of mixed wild rice and grilled (inside on grill pan) asparagus seasoned with fresh lemon juice and remaining carmalized shallot slices..  Simple, light, and delish.  Grilled both the chicken breasts and asparagus inside.  You can't mess up rice, just have to choose what you like!

 

I know we have some awesome cooks on board here....so I've missed you all and tell me what you're cooking today.....and always!

Oh, my, it's @alexinflorida!  It's good to see you pop up!

 

I think the husband and I will have lunch out, maybe by the water since the sun is out, and just have turkey sandwiches later.  I'm cooking less and less

@alexinflorida DH has marinated short ribs for DS with sauteed mushrooms.  He and I are having grilled New York strip steaks with slaw/salad.  He just said - we never go out anymore.  I said - we can make everything better at home!  Your dinner sounds delicious

I'm not sure you can go wrong with short ribs, grilled mushrooms, strip steaks, etc.,

We usually eat out, but cooked today for lunch, which is always our main meal. 

 

We had a Hormel pork roast, baked Vidalia onions and squash casserole. 

 

For dinner, my husband will eat more squash casserole and I'll have yogurt as he has great metabolism and I don't!  

 

We cook very infrequently anymore. 


Why is it, when I have a 50/50 guess at something, I'm always 100% wrong?
