I keep enough to have a 2nd day Thanksgiving meal for the family (usually Sunday). All other turkey leftovers are used for soup, stock and casseroles and then frozen till we want to eat those meals. I don't freeze slices so that isn't an issue.

 

This is why I purchase the largest size that will fit into my oven; I make a lot of future meals with it.

We will  have a 22lb bird for 3 people for 3 reasons:

 

1. It was all that was available in my area (supply chain issues!)

 

2. The rest of the family is stuck in Colorado for the holiday!

 

3. We LOVE everything about turkey leftovers! Tetrazzinni, sandwiches, soup and stuffing balls and muffins! Goes on for days! We like it so much I've been known to cook the meal in the middle of summer!

Turkey, dressing, gravy and cranberry sauce are our favorite foods, so I cook enough to feed the 4 of us until Sunday, but often have to make more gravy.   

 

When it comes to leftovers, there may be enough for a pot pie or small bowl of turkey salad.

It's just the 2 of us this year.  I think what I'll do is save another meal of turkey, gravy, mashed potatoes and green beans for us.  I'll put any other leftover turkey in the blender and freeze it in several containers for our wonderful Golden Retriever!  ❤❤❤  We feed her real food anyway, so this is a good opportunity to make good use of any leftover turkey!

@chickenbutt hmm I was just thinking ...I'm a conert to tuna and mashed avocado...I wonder if you'd like turkey salad sandwich with avocado instead of mayo...yum

i use up every bit of the turkey......LOVE it.

 

we eat sandwiches, both hot and cold.....hot brown sandwich, a turkey brie grilled cheese with cranberry sauce to dip it in.

 

i make sure to simmer the carcass for at least half a day to get the broth/stock and every little bit of turkey off of it. it makes a lot so i freeze a lot of stock for use at another time, particularly for soups.

 

turkey noodle vegetable soup

and turkey barley soup will be made also.

some i keep, some i give away.
