I saute it with olive oil, garlic, and salt (or soy sauce) or make a kale, tomato, and bean soup. It is yummy! I don't find it bitter at all.

Even my son loves it (he eats like an adult though, LOL). I'm very lucky.

I tried them too...they turned out terrible.

I bought some at Trader Joe's...there were just as bad!

I blend 2 or 3 leaves in Vitamix smoothies...and I like it stir fried or steamed. My local food co-op has a great salad - they "massage" the leaves - it takes the bitterness out.

Last night I had a TJ side dish from their frozen section - kale, sweet potatoes, quonia, carrots. It was very good.

DH has diabetes 2, it runs on this mother's side, and none of them are/were overweight, including DH. He's a big reason I accumulate healthy recipes that also have a lot of taste. It seems to work, his blood sugar is always under control.

Yes, even if I wanted to eat junk food I couldn't. My body absorbs much less vitamins and minerals since I developed Crohns and have had a good portion of my large intestine out so I have to make what I do eat count. Both sides of my family have diabetes (type 1 and a few with 2). When I was younger I could eat not as well and it wouldn't affect me but now I can tell when I eat something junkie and I really feel it.

My mom cooked really healthy when I was growing up so it wasn't a huge change. I am glad for that because that would be difficult to change your entire eating habits.

Like Terrier, I have a Vitamix and I love that thing!!

When I am having a Crohns flare, I do have to give up kale and other veggies until it passes though.

I've never tried it. When it became "in" a few years ago, I was on blood thinners and couldn't eat kale because it was high in vitamin K which is a no-no with the Warfarin. Now that I'm off the blood thinners, I just haven't tried it. I don't like spinach so I just figured I wouldn't like kale.

Why is it, when I have a 50/50 guess at something, I'm always 100% wrong?

I understand your struggle with Crohn's, a good friend of mine had the same struggle, also with not absorbing nutrients. You've done an amazing job with food and knowing what works and doesn't work for you.

Irshgrl - Does pulverizing everything in the Vitamix aid in digestion?

Or is it still irritating?

I have wondered if I get any benefit of fiber when I use the machine to make smoothies.

I didn't know that, thanks for mentioning it. I take a mild blood thinner but haven't had any restrictions.

I'm glad you don't need them anymore, I remember that daily shot in the tummy Smile

When I was diagnosed with cancer 4 years ago-I checked into nutrition/diet/cancer. My research showed that dark leafy greens were at the top of the list for people interested in fighting cancer. Broccoli SPROUT extract has been shown as very important for fighting cancer. In fact, my oncology doctor is involved in a study using it to fight head/neck cancers. I buy the broccoli sprout extract from Vitacost. I take 2 capsules daily and I'm still here to talk about it.

Kale, spinach, broccoli, etc. are GOOD for you. I buy organic greens. Kale comes in several varieties. I put the raw greens in my Vitamix smoothies with other goodies. I will put them in soups, sauté them with olive oil and garlic, braise them with tomato sauce or just put them in salads.

Eat more Kale!
