I just put a 19 pound bird in to the oven.

 

 

 

First, I let it soak overnight in a brine, then after I rinsed it off, I injected it with Zatarain's Creole Butter marinade. 

 

Then I let it rest for a few hours.

 

I then shoved about two dozen cloves of garlic up its backside, before massaging butter on the skin, and sprinkling salt, pepper and paprika.

 

 

I am cooking it inside a roasting bag.

 

 

 

It should be nice and juicy and flavorful!

 

 

 

 

I can hardly wait!

I'm suddenly in the mood to make a roast (beef or chicken).  I haven't done so since early spring and have been eating mostly salads and grilled food over the summer.

 

It's gotten cooler here the last week or so and one can sense fall in the air!

@Anonymous032819    As a party of one, what are you going to do with all the turkey meat?  I accidently bought a 19 lb ham at Easter.  I've still got some in the freezer but I'm thoroughly sick of it.  I've made ham-everything.
