I do this for potato salad but not for mashed because I use some of the potato water in the gravy. Potato peels are no longer eatable because of the pesticides.

I worry about the pesticides as well. I scrub my potato's with soap and rise like crazy...not sure if it removes it all though?

I buy local potatoes when they're available but even those have pesticides. What I've found is that the potatoes that don't sprout have the most pesticides.
I've gotten tomatoes that will stay firm but get little bumps and if they're cut open all the seeds are sprouted and trying to get through the skin, creepy.

Funny but I don't mind potato peeling and this method seems like more work to me. Pots to wash and dry,wasted water, juggling hot potatoes. I'll just peel and be done with it. I can do them really quickly. In the time it took her to boil, dunk, and pull off the skin I could have 3 or 4 potatoes peeled.
