I love cheese. Lots of cheese .I use cheese a lot in my meal preparation. Favorite is hard to say - for right now I'm going to say a good sharp Vermont cheddar. I don't eat very much meat so dairy and eggs are my usual protein source.

I'm originally a "Cheese Head" (from Wisconsin). Actually, I don't care for cheese that much, although I do eat cheese curds. Muenster cheese (very mild) on crackers is good occasionally too. Feta is also good sprinkled on a salad or sandwich.

Every New Year's eve we get our favorite--  it's a combo cheese with both Double Gloucester and Stilton.  You therefore get both smooth cheese and the sharpness of a blue cheese in one bite.  Our local cheese shop carries it, and it's a bit expensive so we reserve for special occasions like New Year's, along with crisp water crackers, some kind of berry-infused ginger ale, nuts and yes, chips.

I have a serious salt craving...

I love that one @Oznell

Trader Joe's comes out with it once a year, I think in the winter.

I have too many favorites to list.

Because of a milk allergy, cheese is a big no-no for me.   I like Colby, cheddar, provolone and mozzarella, but my system just does not tolerate it.

It has been years since I could eat dairy, but I have fond memories of smoked gouda.  Yum!

I would eat and love almost any cheese except blue cheese and limberger sp?.

I eat only mild cheeses.  White American cheese, mild cheddar and mozzarella are about as far as I venture.

I'll cook and bake with a few others.
