Mozzerella and provolone (especially smoked....YUM).  I like milder cheeses.

Unless we're talking melted over nachos.  In that case, cheddar.  But in general, don't care for the stronger or sharper tasting cheeses.

Although, now that I think about it, I do like a bit of nice Parmesan too.  The real stuff.
