Make a 'bow tie' and 'ears' from the 2nd layer of the cake mix.

This was in my Junior Betty Crocker Cookbook from the 1960's. I've made it many times and will be doing it with our Grands again Easter Saturday.

That's a good idea, I'd do it, but Irsh's cake is so visually stunning. IMO lemon and blueberries are the perfect combo for Easter.

One year when the kids were little, I did a Wilton Easter lamb cake. The bunny above reminded me of it. When done, it looked just like a poodle. Every year, our daughter asks if we'll be having the Easter Poodle again.

One of the desserts I was making is a coconut cake so perhaps I will make this bunny cake just using my recipe, (Alton Brown's recipe actually). It is very cute!!

Then maybe my family will request the Easter Poodle Cake each year. (Cute story)

When I have cake, I want sweet icing, none of that whipped cream stuff. It's always a huge disappointment for me to find it on my piece of cake.

I think a stabilized whipped cream would be great, but I'm a big whipped cream fan. Smiley Wink You could even do a glaze with powdered sugar and fresh squeezed lemon juice and lemon zest on it?

I made the bunny cake a couple of times when my niece was little. It was always a big hit with both young and old. It's adorable!

Coconut cake is one of my favorite dessert -- I have it maybe once a year. My mother makes a coconut custard pie that almost brings me to tears. Omg, with fresh whipped cream and a little toasted coconut on top? The best -- ever!!

I love coconut cake also. It is one of my favorite cakes. I love coconut anything and I also love coconut custard pie. There are some good southern restaurants where I live that make some good ones! Anything lemon and anything coconut I love. I don't like chocolate desserts really but I am making one of those for the chocolate lovers in my family.
