I have been cooking for a long, long time. I am not a novice. I can assure you that I know what raw undercooked chicken looks like. Even a portion of the breast meat was pink.
I cut the chicken on a wooden board and the blood ran off of the board on to my counter. It was not pink, but was red and the leg joints were purple red. I could tell that the chicken was previously frozen by the color of the bones and it was so raw that it difficult to disjoin the legs and wings.
I can assure you, this chicken was not cooked correctly. I couldn't even remove the leg meat from the bone.
Trust me, you wouldn't have wanted to eat this chicken.

I LOVE their rotisserie chicken and buy it every time i go to Costco! But who buys a chicken and doesn't cook it at home? I always bake mine (more) before I serve it. I never trust a store bought "cooked" chicken.

Most people would not think to have to cook a chicken that they bought for the very reason it is already cooked. Why buy a rotisserie chicken to then have to cook it more?

@ID2 - uh, that would be me, says Gidget, raising her hand.
When I buy a fully cooked rotisserie chicken at the store (which I rarely do since my husband died) I assume it's in ready to go condition. It would never occur to me to come home and cook it again. Warm it up, of course, but full on cook it? No.

That's unusual for Costco. I haven't bought the chicken there in a number of years, procedures may have changed. A few times when I did go there to get one, they'd just cooked up a new batch. The worker put a meat thermometer in each and every chicken before taking them off the spit to package them. With staffing issues, the store could be cutting corners, but that's a very dangerous procedure to cut.

Over the years I have read several recipes that quote "until the juices run clear." So pink myoglobin is not acceptable to me. I got sick on pink chicken years ago before I learned how much poultry is contaminated with salmonella. I buy rotisserie chickens to avoid cooking it myself.

I was thinking of you today. Or shall I say I was thinking of your picture of the Costco chicken today. We were in Costco and were talking what did we want for dinner. We were right by the rotisserie chicken. So I said do you want the rotisserie chicken?
My husband walked up to the display and said "Which one should I pick?" I said the one that looks the most well done. All the time thinking about the picture of your chicken. I was wondering if I should have kept my mouth shut.
When we got home I showed my husband the picture of your chicken. So he said "How about I take the meat off the bone." My son comes home from work after 8:00PM. So I kept thinking if we got an undercooked chicken, I would not want to find out at 8:00PM. And then have to cook it.
The chicken was cooked though. So sorry your's wasn't. Your picture made quite an impact.

@drizzellla I am glad yours was cooked correctly. I have never purchased a chicken before at Costco that was undercooked.
To be honest, I picked up the biggest chicken they had....I won't do that again.

You could take the whole chicken back and they would refund your $5 on the spot, but it's better they know that either someone is putting them out too soon or the machine is t working properly. I just made chicken-green chile soup last night using their rotisserie chicken; have bought it for years and never had a problem. When I was working it was a great quick dinner. I would buy the chicken and a Caesar salad there and dinner was ready.
