UGH!  I knew there was something I forgot to mention - we almost hit a bear today.  A "teenager"...not a cub nor fully grown bit big enough to cause damage.

At least it wasn't a Buick!!  Seriously, glad you didn't hit it -

OK, I'm going on an online hunt for recipes for pork chops, which I haven't made in a long time.  Something new, I hope.

Would you like my mango salsa recipe for your pork chops?

Hi JJM, yes, I would!

I have to change plans on dinner for tonight,  but we'll have the chops tomorrow.

I would like your mango salsa recipe Smiley Happy  I used to do fruit salsas, love them, we haven't tried a mango salsa.

Do you bake your chops or use a skillet?

Good Morning Smiley Happy

What's up?

@NoelSeven

I was just thinking of you as I made lunch.  Today's lunch is a conglomeration of all things 70s.

small GF pasta shells

broccoli/cauliflower slaw

shredded carrots

petite green peas

one red pepper, diced

two scallions, diced

one head of broccoli, chopped and roasted

roasted turkey bacon

shredded cheddar cheese

I mixed all of these items together, with Penzey's lemon pepper seasoning, a bit of bacon smoked sea salt, and added cranberry pear vinegar, and three different types of olive oil.  Then I spread a couple of scoops of it onto organic spinach leaves (dry) and combined it as I ate.

Delicious!

Shoekitty asks:

Lola, how did you roast the turkey bacon.  I don't eat meat, but do dabble in a little poultry at times.  Sounds good.  What is the best turkey bacon in your opinion?  Trader Joe's?
