Any movie soundtrack by Ennio Morricone (an absolute genius) is high on my list.

Anyone who saw A Fistful of Dollars will (no doubt) remember The Good, the Bad and the Ugly.

My favorite of his is the soundtrack from The Mission. Gabriel's Oboe (it became the melody for Nella Fantasia) is beautiful.
