I just put my corned beef in the pot to soak first. Gets rid of some of the salt. Then will have regular ole boiled corned beef, pototoes, cabbage, carrots and onions. We love this dinner and have a few times a year. Not just for St. Patrick's Day.

I soaked ours beforehand, too, and it really does work to make the meat less salty!

Re: Anyone Started Cooking Yet For St. Patrick's Day Dinner?

no one here is interested in corned beef

so

I made a delicious modified chicken ala king -- no mushrooms or peppers -- but spinach and broccoli served over homemade biscuits -- YUM!

Just had leftovers for lunch -- yum yum yum

now if I can just remember how I made it ....

I think most of us who are Irish know these things. We celebrate the day with American traditions and that's just fine with me.

I'm just not sure why you felt the need to post this on a happy thread about preparing a meal on St Pat's Day.

Re: Anyone Started Cooking Yet For St. Patrick's Day Dinner?

I ended up totally forgetting to eat last night. d'oh! About 8:00 I realized that I didn't eat and figured, oh well, too late now. But I did drink half a Myoplex protein drink and ate a handful of almonds.

Geez, good thing I don't forget to feed the dog and bird! Of course, they wouldn't let me forget anyway so I guess that's a good thing. Smiley Happy

For one I'm Irish and two why deny knowledge ? I would rather know what my ancestors delt with and think of that prior to preparing and eating my meal. Is that a problem? My Grandfather was born in Ireland and I know he had a hard time coming over here but through hard work he made something of himself. If my other Grandfather who was Jewish could share a meal with him combined of their cultures and heritages I see no problem in learning the real back history do you?

And I would hope if most Americans as you say ""know"" these things they would not be chugging Green beer or eating Green bagels etc.
