Yep. I'm staying in the same state. I am just moving into a place without so much yard to take care of and not being a homeowner any more. I'll be a renter! I'm going to a beautiful condo and a smaller town just on the outskirts of Scottsdale.

I just cook dinner for me most of the time, so nothing special. I took a turkey breast out of the freezer this morning, that I saved from the turkey I made on Thanksgiving (of course I vacuum sealed it, so it's still good).

That will feed me for about a week. ha! Then just add some pasta or a veg and I'm good.

Hope your dinner comes out wonderfully!

I have the corned beef in the crock pot and will start the potatoes shortly. I'm intrigued with the roasted potatoes/onion wedges-

This is the first time using the crock pot. Cleanup will be so much easier with the liners-

I just put my corned beef in the pot to soak first. Gets rid of some of the salt. Then will have regular ole boiled corned beef, pototoes, cabbage, carrots and onions. We love this dinner and have a few times a year. Not just for St. Patrick's Day.

We did have corned beef, cabbage, potatoes and carrots as well. Last year I cooked the corned beef in the oven and I really did like it but I also like the way the veggies taste when you boil them in the corned beef water so this year I switched back to that. Very good. I actually want to do it in the crock pot but I started too late in the day this year.

It was good, but not as good as the old favorite New England boiled dinner. I got great little red potatoes called creamers, which I do every St. P. day... they're much better boiled, too.

Our next experiment will be trying the corned beef in a slow cooker, but I won't wait a year to experiment.
