The Basics: How to Make Compound Butter

COMPOUND BUTTER RECIPES:

Chipotle Honey Butter

 

Ingredients:

½ pound unsalted butter, room temperature

2 tablespoons honey

2 chipotle peppers in adobo (about 2 tablespoons)

¼ teaspoon salt, to taste

 

Directions:

  1. Cut the butter into chunks and place it into a food processor bowl.
  2. Add the honey, chipotle peppers and salt and process until smooth.
  3. Taste and season.
  4. Transfer the butter to a piece of plastic wrap and shape it roughly into a log. Roll the butter in the plastic wrap and store in the refrigerator or freezer.

Citrus Herb Butter

 

Ingredients:

½ pound unsalted butter, room temperature

1 tablespoon lemon zest

1 tablespoon orange zest

1 tablespoon lime zest

2 tablespoons chopped fresh herbs (parsley, cilantro, tarragon)

1 tablespoon lemon juice

¼ teaspoon salt

 

Directions:

  1. Cut the butter into chunks and place it into a food processor bowl.
  2. Add the zests, herbs and juice and process until smooth.
  3. Taste and season.
  4. Transfer the butter to a piece of plastic wrap and shape it roughly into a log. Roll the butter in the plastic wrap and store in the refrigerator or freezer.

 

Blue Cheese Butter

 

Ingredients:

½ pound unsalted butter, room temperature

½ cup blue cheese

2 tablespoons chopped fresh chives

¼ teaspoon salt

freshly ground black pepper (optional)

 

Directions:

  1. Cut the butter into chunks and place it into a food processor bowl.
  2. Add the blue cheese, chives, salt and pepper, and process until smooth.
  3. Taste and season.
  4. Transfer the butter to a piece of plastic wrap and shape it roughly into a log. Roll the butter in the plastic wrap and store in the refrigerator or freezer.
