Peanut Butter and Jelly Rolls with Berry Dipping Sauce
Transform ordinary PB&J into an appetizer worthy of any party spread. The berry sauce is perfect for dipping or drizzling over top.

Ingredients
For the PB&J Rolls:
4 slices white bread, crusts removed
4 Tablespoons (75 g) Vitamix Peanut Butter
4 Tablespoons (80 g) jelly
For the Berry Dipping Sauce:
2 Tablespoons (30 ml) raspberry vinegar
1 Tablespoon balsamic vinegar
Dash Worcestershire sauce
½ teaspoon shallot, peeled, chopped
2 Tablespoons (25 g) granulated sugar
1 garlic clove, peeled
Pinch dried basil
Pinch dried oregano
1 cup (125 g) fresh raspberries
1 cup (240 ml) salad oil
Directions
To prepare the rolls, pound or roll each piece of bread flat.
Spread both peanut butter and jelly over the pieces. Roll bread like sushi with a bamboo roller.
Slice into pieces, being careful not to press too hard, or jelly will come out.
For the dipping sauce, place raspberry vinegar, balsamic, Worcestershire, shallot, sugar, garlic, basil, oregano, and raspberries into the Vitamix container in the order listed and secure lid.
Select Variable 1.
Turn machine on and slowly increase speed to Variable 8.
Blend for 15 seconds or until desired consistency is reached.
Reduce speed to Variable 6 and remove lid plug. Slowly add the salad oil through the lid plug opening. Replace lid plug
Blend for an additional 10 to 15 seconds or until desired consistency is reached.
Serve with the rolls.
This recipe has been written for the C-Series machines with Variable Speed control and Standard 64-ounce container. If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.
Vitamix Granola Bars
These sweet and crunchy whole-grain bars are a great make-ahead snack that you can take on the go, or pack in kids' lunches.

Ingredients
1/4 cup (50 g) wheat berries or 1/2 cup (60 g) whole wheat flour
1/4 cup (28 g) wheat germ
1/2 cup (70 g) raw almonds
1 cup (155 g) rolled oats
1 medium to large apple, seeded, cubed or 1 1/8 cups (210 g) unsweetened applesauce
1/4 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
3 Tablespoons (45 ml) honey or agave nectar
1/2 cup (60 g) dried cranberries or cherries
Directions
Place wheat berries, wheat germ, almonds, and oats into the Vitamix Dry Grains container and secure lid.
Select Variable 1.
Turn machine on and slowly increase to speed to Variable 10, then to High.
Blend for 30 seconds. Turn machine off. Pour out into bowl.
Place apple into the Vitamix Dry Grains container and secure lid.
Select Variable 1.
Turn machine on and slowly increase speed to Variable 10, then to High.
Use the tamper to press the apple into the blades.
Blend for 35-40 seconds or until consistency of applesauce.
Pour into bowl with dry ingredients. Add salt, cinnamon, vanilla, honey, and cranberries to mixture.
Mix gently by hand to combine. Spread into greased 8-inch x 8-inch (20cm x 20cm) pan.
Bake for 25 minutes in a 350˚F (180˚C) oven.
If using wheat berries, blend for 45-60 seconds in step 4.

Going Green Smoothie
Sweet fruit complements a healthy dose of fresh spinach in this refreshingly green smoothie recipe.
Yield: 1.5 c ( 360 ml )

Ingredients
1/3 cup (80 ml) ice cubes
1/3 cup (55 g) pineapple chunks
1/4 ripe banana, peeled, halved
1 cup (30 g) fresh spinach, packed
1/4 cup (60 ml) water
1/2 cup (75 g) green grapes
Directions
Place all ingredients into the Vitamix 20-ounce container in the order listed and secure blade.
Turn the dial to 1 and slowly increase speed to 10.
Blend for 25 to 30 seconds or until desired consistency is reached.
This recipe has been written for the S-Series machines with Variable Speed control and 20-ounce container. If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.
