When the world gives you lemons...make Lemon Chicken with Mushrooms!!
This is a fast and easy recipe. Fresh lemons add a lot of flavor. One pan for the chicken. I made mashed potatoes and steamed broccoli but this would be delish over rice too.
Lemon Chicken with Mushrooms
4 chicken beasts, pounded to 1/4 inch thickness
2 lemons, sliced
2 cloves garlic, chopped
1 onion chopped
1/2 cup chicken stock
1/2 cup dry white wine
1/4 cup flour
Salt & pepper to taste
1/2 stick butter
Season chicken breast with salt and pepper on both sides. Dredge in flour. Heat butter in frying pan. Add chicken beasts, brown on both sides about 5 minutes each side, remove chicken from the pan. Deglaze the pan with chicken stock. Add onions and mushrooms & garlic, cook until softened. Add lemon slices, squeezing the juice into the pan. Add wine. Return the chicken to the pan, spoon sauce over the chicken continue to cook over medium heat for 5 minutes. Enjoy!
