Quick & Easy One Pan Chicken

It was too hot outside to grill and I wasn't in the mood for pasta so I made a summer comfort food dish. You probably have made a version of this classic.

Quick & Easy One Pan Chicken

6-8 chicken thighs (you can use breasts too)

1 bag fresh spinach

1 cup sliced mushrooms

1 medium onion, chopped

1 can cream of mushroom soup

1/4 cup white wine

Olive oil

Salt & pepper to taste

 

Season chicken with salt & pepper. Sauté the chicken on both sides until golden brown and cooked throughout. Remove from pan, set aside Deglaze the pan with wine. Add spinach, onion & mushrooms, cook until tender. Add mushroom soup, cook until bubbling. Return chicken to the pan. Cook for another 10 minutes.

Serve with wild rice and green beans. I added a little sauce on my rice. Yummmm!!!
