Skip the ice cream and go with this cleaner version of the decadent treat on National Chocolate Mint Day!
You will need:
1/4 avocado
1 banana (I freeze mine beforehand to forego ice)
3 drops peppermint extract
1 tbsp soaked cashews
a few mint leaves (either blend in or use as garnish or both)
1/2 cup coconut milk
1/4 cup coconut water
2 tsp protein powder (vanilla if you want to keep it a green color; chocolate if you are a chocoholic like me!)
ice (if you aren't freezing the banana)
2 drops green food coloring (if you're posting pics to social media like me
)
