Fall-Friendly Snack Attack Recipes

Here's another round of clean eating recipes... just in time for a Fall snack attack!

Sweet potato chips

2 large sweet potatoes

2 tbsp. melted coconut oil

2 tsp dried rosemary

1 tsp sea salt

 

Preheat to 375. Thinly slice the sweet potatoes and toss in a bowl with the remaining ingredients. Place in a single layer on parchment-lined baking sheets and bake for 20 minutes, flipping halfway through.

Coco-Choco Bites

1 cup almonds

1/4 cocoa powder

1/2 cup shredded coconut (divided)

1 cup pitted dates (soak for 30 min then drain)

1 1/2 tblsp coconut oil

1 tbsp. honey

 

Combine almonds, cocoa, and half of the coconut in a processor and Process into a powder. Add the dates, oil and honey and process until dough forms. Roll into small bites and toss in remaining coconut. Enjoy!
