If the man wants to have a one item meal, let him.
If you want veggies with your meal, make them for yourself.
Less stress for both parties.

We agreed when we were married that we expected to both go to school and work, and both work. And being the modern couple we would share chores.
His first meal was fish sticks, potatoes and some white corn as I remember. It was served on a plain white plate. I remember looking at the plate and asking "Where's the food?" He looked at me sort of funny and then we both laughed and it was chat number one about nutrition. It is known as the "white meal." Never served again.
I told him God said "Man cannot live by carbs alone." He is a great cook, concerned about what we eat, and a blessing to me every day! He cooks a lot now and is better at some things than I am.
He cooked Swiss chard and roasted yellow squash last night along with corn on the cob and the leftover chicken we had!

DH will just slap some kind of meat on the grill. no marinade, no seasoning. he won't think of a vegetable or anything. he might open a can of baked beans or slice a tomato.
my meals are always complete with salad, veggie and another side. so he will eat the sides but only if i make them.
i do not eat his steaks pork chops lamb chops or burgers. whether he grills them or fries them on the stove he never will prepare a complete meal.

Let him grill, thank him for your portion, and ask if he wants some of your salad. No drama.
Or else start the conversation way earlier, like when he brought in the meat.
