Shabbat Shalom and Happy Weekend! As we reach the end of Passover, I am wondering what to do with a few boxes of leftover Matzah. We like to snack on it with butter & jam or topped with pizza sauce & toppings then baked briefly in the oven ... Presto! Pizza time; Any favorite recipes for using up Matzah?!

We have 3 boxes of matzo left.  LOVE Matzo Brei.  Wish I could make it like my Dad did.  SO GOOD with cinnamon and sugar.  Also like matzo with some margarine and Kosher salt,  or peanut butter and jelly.   Doe anyone know why the Egg and Onion matzo is not Kosher for Passover?   That is so delicious.

Wishing everyone a safe,  HAPPY and healthy weekend.  It's supposed to go into the 80s tomorrow,   which is crazy since I have a thermal on today and it's back in the 30s, 40s and low 50s next week.   INSANITY!

I always have a bag of mixed  finely crushed matzoh, saltine crackers, and soda crackers in my freezer. When there are a few left over I crush them and throw them in the bag. I use them for crab cake filler and in place of breadcrumbs. It was a tip from one of Andrew Zimmerns cooking shows years ago.

Thanks for those great suggestions! How could I forget to mention Matzah Brei! We love it too, topped with jam I like the idea of turning it into crumbs, using it just like breadcrumbs. As kids Mom would use farfel in soup or make kugel with it.

Not sure why egg or onion matzah isn't able to be used for Passover. But I have used the onion matzah as savory Matzah Brei.

It is sunny here today and, I believe, going to be warmer tomorrow.  Hurrah for good weather!

The leaves that have emerged and the flowers that have bloomed make me rejoice in the rebirth of the world at this time of year in my part of the Earth.  Even the dandelions make me smile.
