Spinach Coleslaw with Red Cabbage

I got this recipe from a Cuisine At Home magazine. It is a good "stand alone" slaw, but also very good on pulled pork sandwiches!

1/2 cup mayonaise

1/2 cup vegetable oil

1/2 cup white wine vinegar

1/4 cup sugar

1 1/2 tsp dry mustard

1 tsp kosher salt

1/2 tsp cayenne pepper

1 bag coleslaw mix (1lb)

1 bag shredded red cabbage (10 oz)

1 bag fresh spinach, thinly sliced (6 oz)

Whisk first 7 ingredients together.

Add coleslaw mix, cabbage, and spinach. TOSS

Let coleslaw sit 30 minutes before serving.
