Got some beautiful Heirloom tomatoes at the Farmers Market.
1 pound ripe tomatoes
1/2 pound green beans
3 T olive oil
3 t balsamic vinegar
2 T shredded parmesan cheese
pinch of Kosher salt
pepper to taste
Trim ends of green beans and cut into desired size. Drop into boiling water until crisp-tender - about 5 minutes. Put beans into ice water to stop cooking and retain color.
Cut tomatoes into bite size pieces.
Mix olive oil, vinegar, cheese and salt in a small bowl. Toss green beans and tomatoes with dressing. Sprinkle with a little more cheese and some pepper.
I usually put this on a small platter to serve.
