2 T Canola Oil
2 C Chopped Celery
1/2 C Chopped Red Onion
1/2 C Chopped Red Bell Pepper
2 1/2 lbs. Ground Turkey
8 oz. Sliced White Button Mushrooms
1/4 t. Minced Fresh Garlic
1 T Chili Powder
1 1/2 t Salt
1/4 t Freshly Ground Black Pepper
1/8 t Garlic Powder
1 C Shredded Cheddar Cheese
1/2 C Sour Cream
4 oz. Cream Cheese cut into sm. pieces.
1 T Fresh Chopped Parsley (optional) garnish
1. Heat the oil in a large skillet over medium/high heat. Add the celery, onions, and peppers, and cook until slightly tender.
2. Add the ground turkey and cook until browned,. If there is any excess fat, drain it off with a spoon.
3. Next add the mushrooms, garlic and seasonings and simmer for 4 to 5 mins., stirring constantly.
4. Remove from the heat, stir in the cheddar cheese, sour cream, and cream cheese and serve with fresh, chopped parsley, if desired.
Note: For another tasty twist used diced eggplant in place of the celery. You can also crispen up the skillet by adding another 1/4 C of cheddar cheese on top and finish off under the broiler for just a minute until lightly browned.
