Banana Chocolate Chocolate Chip Cookies
2 sticks butter (1/2 lb.), softened
1 1/2 cups confectioners sugar
1/2 tsp. lemon extract
1/2 cup mashed banana (1 medium)
1 tsp. baking powder
1/4 tsp. salt
2 cups flour, packed
1 cup semi-sweet chocolate chips
Beat the softened butter & confectioners sugar together until light and creamy; add lemon extract.
Break banana into chunks and mix in; sprinkle in baking powder and salt - mix until batter is smooth.
Add flour in increments, maxing after each addition.
Stir in chocolate chips by hand.
Line cookie sheets with fool and spray with Pam.
Use a teaspoon to drop dough 2" apart on the cookie sheets; flatten slightly. (For larger cookies, use a 2 Tbs. size scoop.)
Bake at 400 degrees for 8-10 minutes, until golden on top. Remove from oven, and cool on cookie sheets for 2 minutes. Peel foil off and transfer cookies to wire rack to cool completely.
Makes about 3 dozen large cookies or 5 dozen smaller cookies.
NOTE: Try these with peanut butter chips!
