Here in the South, a good side dish with Chicken Salad, is Pimento Cheese!

I like chopped pecans, cranberries or grape halves in my chicken salad.

I love the appetizers on the previous page and will have to try those. I love caprese salads and sandwiches, so why not stick them on a skewer? The skewers with cucumber, tomato, and feta also looks delicious. You could also add a kalamata (Greek) olive.

We pretty much put it on anything. (We used to love having half a chicken salad and half a pimento cheese sandwich when we were kids...and we would put potato chips in our sandwich and smash it down flat.) Now I love it melting on a burger.
