My mom made the best Waldorf salad. It looked just like your picture @ECBG. She was very health concious so never used a lot of mayo. In fact, I want to say she mixed it with some low fat sour cream. Crisp apples, crunchy walnuts, celery and golden raisins...yum. We only had it once or twice a year on a special occasion. She always made it look fancy lol. Yeah, I'm with you on the jello salads, though. I have never cared for them.
